Today is Day 11 of our community quarantine. And my little one wanted pancakes for breakfast but we don't have pancake mix. So I pulled out this tried and tested pancake recipe. So why not share this with you guys as well. It's so easy and your kids will surely love to help you make the batter.
Ingredients
1 2/3 cups All-Purpose Flour
1/3 cup Cornstarch
2 Tablespoon Baking Powder
2 T Sugar
1/2 Teaspoon Salt
2 Large Eggs
1 1/2 Cups Fresh Milk
1/4 Cup Canola Oil
1 Tablespoon White Vinegar
Procedure
- Mix all the dry ingredients. Flour, cornstarch, baking powder, sugar, and salt. Then set aside.
- Mix all the wet ingredients. Milk, oil and one egg at a time.
- Combine dry and wet ingredients.
- Lastly, add the 1 tablespoon of vinegar.
Note:
- Don't overmix the batter.
- You may add more sugar.
- In a time of quarantine, if you don't have fresh milk. You may just use water.
- Use all the batter immediately. Your pancake will not be fluffy anymore when you cook it after few hours.
